Our Story

Chofi, is the nickname of husband and wife team Patrick and Kim Flammia's two-year-old Daughter Sofia. Chofi Taco y Birria started as a pipe dream, between two long time restaurant workers trying to start their own business. They started cooking birria in their home three years ago. They both had experienced birria separately. Patrick spent a few years working in Los Angeles and Kim spent a few months cooking in Mazatlan where they both first enjoyed birria respectively. Their concept was first seen at Smorgasburg, the outdoor food festival in Brooklyn. They then opened a location of their first brick and mortar in Union City, NJ where they currently call home.

Kim the chef and culinary creative of Chofi is a native of Puebla, Mexico where she learned a lot of her cooking and recipes from her grandmother. While spending most of her twenties working fine dining restaurants in NYC including Jean-Georges and Danny Meyer's Untitled. 

Patrick the moral support of the team and the unfortunately very less Mexican of the family, spent his career running front of the house at restaurants, Jean-Georges, Carbone and The Bazaar by Jose Andres.
